Yes, you can leave the ring. Djelian warrior champion isn't a low level quest so 380 bonuses definitely won't cut it. I had about 450 in my offensive and defensive melees before I tried it and I succeeded but I still had to sit in wimp for a good 30 or 40 seconds til the warcry wore off or he'd whomp on me.

Have you been looking around you lately? There's bloody 10 day olds with 350-400 bonuses running around soloing noblemen groups/giants and things like that. Good fighting bonuses would be around 450-500+ melee, ~450 defence, and about 300+ tactics and 3k hp.
And even those arne't hard to reach if you konw where to go

You need to be level 250 or the champion won't fight you. You can leave the arena, but he won't fight you again until he 'forgets'.

Can multiple people fight him at the same time, does that mean whoever your with would get the quest also if you succeed?

Yet most of them are alts of someone else and have friends to help them. Not to mention the fact that pound a mace into their head and you've taken most of their Hp off in one special.  They walk around with 2K Hp tops, most of the time. So they die.

You can run away, check the exit before you ring the bell but it's just the same as however you'd leave the room - BE WARNED - when you do you are shot at with arrows for your cowardice so make sure you have at least a few hundred hp left to survive that too.
The way I did this, many years ago now was simply to have a friendly thief filch his weapon at the start - these days though that could cause more problems (npc going into wimpy mode etc)

So... how the hell are you supposed to do this quest being a Wizard? You can't use offensive and defensive magic at all? Dunno about those 'bloody 10 day olds' with helping friends who tour them through Shades, Snails, Medinas and whatnots, but I'd be hard-pressed to name even 50 day-old wizards (and probably higher: just look at Sined's melee skills, high but barely enough here, from what's been said) with anything near those melee skills as required...
So what can be done? Priests healing you? Snatching of his weapon? Or de we just have to sulk and groan until we get those absurdly high melee skills?

In a word: yes.
Pretty much like anybody but a witch or a wizard is going to have pour stupid amounts of xp into magic to get a quest like 'Occult Apprentice'.
