I found one in the pizza parlor and one in the stables.
How did you get in the one in the casino?

Go to the room with the stage and go west through a hidden exit, I believe.

The different locations are as follows:
Gumboni is in the casino as is suggested everywhere in the casino. Go upstairs, east from the bar, east (hidden) on to the stage, then (up) hidden.
Carolla is not hidden at all, but at the Honest Joe's Used Horses. They also seem to have some weird combat thing in the sewers, and I would be surprised if they had more in the sewers as their Don's description suggests that.
And I forget tha name of the one you get to going north in the Pizzeria.
The race track seems to be mafia oriented too, and I am told there are 4 different families in town.

The family in the Brandisi (sp?) Pizzeria is the Coeur-Lion.
I heard there are 4 families, but dont know the location of the fourth one not listed here.

You can ask the consigliere for a favour, and the banker for a loan. You can do more once you become a member of the family. For all of this you have to please the family by creating difficulties for the other families or their protected places of business.

Anyone know more about how the favour and loan system work? Like the syntax and such? I've had limited success with asking for a loan, as all the banker says is: "Get the hell out of here, punk. "

the Corolla family is all in honest joes. the man you need to see is in a carriage in the back somewhere iirc
dont know where the idea of 4 families came from. the library says "There are currently three Coffee Nostra families... the Coeur Lion family, the Gumboni family, and the Corolla family."
perhaps people got confused with the manno rosa?

All of them attack me on sight by now. How do I get in favour with one of them?

If you want to get in favor with one family, you have to attack and kill members of the opposing families (and stop attacking the one family). Also, robbing shops protected by a family - or attacking shopkeepers under their protection - helps. I'm not sure which symbol matches which family. I do know that the "stylized lion" symbol is for Couer Lion.
I'm currently a member of the Couer Lion family (pizzeria). I managed this by killing almost everyone in the casino and stables (in a group). (I also have a contract on me by the Gumboni family...stupid Coffee Nostra hitmen.)
Since all of them are mad at you, it's going to take some serious work to get the one family you want to join to stop attacking you on sight. I would suggest grouping and periodically wiping out the other two families. If you leave the third one alone, they should eventually come around.
But it will take some time.

So how do you tell when they like you? Go in and hope they don't backstab me?

Sadly, more or less, yes.
Avoid the one you're trying to get friendly with for a bit while you try to fix things. When you think you're ready, enter an area where you might find henchmen and see how they react to you.
If they still call you a "dirty rat" but don't attack, you're getting closer...one or two more cleanups of the other families should do it.
