what would be a good bonus in pottery skills to make stuff instead of messing the clay up?

I would say 130ish. For things like this, I've said before, get all your skills to level 25. You will often find this is around the minimum requirement for the less 'useful' skills. Oh! No!, I've started using quote marks for emphasis, someone kill me!

I needed quite a bit more than 25 levels to get acceptable success rates when making the pottery (for the quest I assume).

I did say minimum. Depends on your skills arrangement naturally but when I did it my levels ranged from 28 to 30 and bonuses from 133 to 142. Firing I found the hardest and had to fire about twice as many pots as I needed but everything else was mostly achieved first time.
That was some time ago mind you before the closure and re-opening of the workroom and before the skill changes.
